We serve this almost every Thanksgiving as it is easy to prepare. You can use margarine instead of butter, and may also replace the brown sugar with maple syrup. Experiment with your seasonings (such as cinnamon and a little nutmeg) for different flavors.

Baked Acorn Squash

2 acorn squash, cut in half and seeds removed
Brown sugar or sucanat
Salt to taste

Preheat oven to 350. Pierce squash with a fork or knife and place a pat of butter, some brown sugar and salt into each cavity. Place in a casserole dish or roaster pan with a little water covering the bottom of the pan to prevent sticking. Bake until fork-tender (approx. 45 minutes depending on the oven). Serve in the shell or scoop out the insides and mash, adding more salt, butter, and sugar if desired.
