My husband and I have had these scrumptious wedges many times. They are so quick and easy to make! Feel free to experiment with the seasonings. Some good ones would be: garlic salt, sea salt and cracked pepper, or some cajun seasoning for some zip. Just be careful when you’re broiling that they don’t burn!
Fast and Easy Potato Wedges for Two
2 Potatoes, each cut into 8 wedges
Mrs. Dash garlic (opt.)
Set oven to broil (or 550 degrees). Place potato wedges, cut side down, on baking sheet. Coat one side with cooking spray and sprinkle with seasonings. (Regular oil may also be used if preferred. Just coat and season). Broil 3-5 minutes (keep watch so they don’t burn). Turn; spray other side with oil and season. Broil until tender and golden another 3-5 minutes longer.
Spoon sour cream onto center of a small serving platter and arrange potatoes around the sour cream. May garnish sour cream with fresh cut chives. These are delicious and quick!
