Linda’s Tofu-Chicken Salad Sandwiches

Trying to come up with sandwich ideas, outside the typical pb and j, can sometimes be challenging. If you love tofu or have always wanted to try it, here is a great recipe I think you’ll enjoy. I first tasted it at my friend Linda Purdy’s house and I HAD to have the recipe! She was kind enough to share it.

Linda’s Tofu-Chicken Salad Sandwiches

1 pkg. extra firm tofu, frozen, thawed and drained
1 green pepper, diced
2 stalks celery, diced
Sliced almonds, (opt.)
Mayonnaise
1 T. table mustard
Chicken-style seasoning to taste
Garlic salt OR powder to taste
Greek seasoning (opt.)

Crumble tofu and sprinkle with chicken seasoning, until mostly covered. Bake in a 350 degree oven for approximately 20-30 minutes, stirring occasionally. When cool, add diced vegetables. Mix approx. 1 cup of favorite mayo, mustard, 1-2 t. additional chicken seasoning, along with garlic salt (or powder) to taste. Add to tofu mixture. Serve on buns, bread, or bagels. Enjoy!!
