Eggless Chocolate Cake (Crazy Cake)

3 cups flour
2 cups sugar
4 tsp. baking powder
½ tsp. baking soda
½ cup cocoa
¼ tsp. salt
2 cups hot water
¾ cup oil
1 tsp. vanilla essence
4 Tbsp. vinegar

Preheat oven to 350°F. Grease, line and re-grease two cake pans.

Place dry ingredients in a mixing bowl. Combine the rest of the ingredients and pour over dry ingredients. Mix well and divide into pans. Bake for approx. 20 minutes. Remove from oven and allow to cool in baking pans for 10 minutes. Cool completely on wire rack.

Spread with butter cream icing and sandwich together, spreading the rest of the butter cream around the sides.


Mix dry ingredients in a 9×13 pan. Make 3 wells, put oil in one, vinegar in 2nd and vanilla in 3rd. Pour water over all. Blend with fork and spatula. Bake 35-40 minutes in 350°F oven.
