Are you craving a breakfast or dinner dish that’s a little out of the ordinary, but hearty and wonderful? This crust-less quiche recipe fits that bill quite nicely! Served with a side of home-fries and a wedge of fruit or vegetable, this tasty treat is a winner anytime!

Crust-less Spinach Quiche

1 onion, chopped OR 1/2 c. sliced scallions
1-10oz pkg. frozen spinach, thawed and drained
5 eggs, beaten
2 1/2 c. shredded muenster or cheddar cheese
1/4 t. salt
1/8 t. pepper
fresh herbs (opt.)

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
Heat a little oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

Note: If serving to a larger group, double the recipe and put in a greased 9 x 13 inch glass casserole. Cut into squares and serve.
