The smell of apples baking in the oven is a tantalizing aroma. Enjoy these in the morning with a cup of tea or as a delectable dessert after a meal. They’re extra special with a scoop of ice cream on the side (vegans may use soy ice cream).

Baked Apples

4 apples (Gala, Fujii or Braeburn work well)
1/2 c. raisins OR craisins
3/4 c. chopped pecans OR walnuts
1 t. ground cinnamon
1/8 t. nutmeg
1 c. apple juice OR apple cider
1/2 c. maple syrup
1 cinnamon stick (opt.)

Preheat oven to 350. Wash and core apples. Place apples in a 9 inch square baking dish. Combine raisins, pecans, cinnamon, and nutmeg. Fill center of each apple with this mixture. Mix apple juice, maple syrup, and cinnamon stick. Pour thoroughly over each apple and cover loosely with aluminum foil. Bake for 45 minutes, or until apples are tender. Baste a few times throughout baking.
