Ambrosia Salad

1 c. pineapple juice
2 t. small pearl tapioca
1 c. bananas, sliced OR grapes (you may also mix half and half)
1 c. oranges, cut into small pieces
1 c. fresh pineapple chunks
1/2 c. coconut

Cook juice and tapioca, stirring constantly until tapioca is clear. Remove from heat and stir in remaining ingredients; chill.
