I have a wonderful Facebook friend Rosemary who shared this recipe with us. The picture to the left is not a bowl of Rosemary’s soup (her’s probably looks even better than this,) but the recipe looks so tasty that I couldn’t wait to share it. To quote an old commercial, “soup is good food” and this one looks like a real winner!

Rosemary’s Homemade Vegetable Soup (Vegan)

Boil 2 to 3 cups of your favorite pasta; I like shells, or Amish noodles
After noodles are done (don’t drain the noodles; leave water!) add:

4 small diced cooked potatoes (or whole canned potatoes you dice)
1 small can of carrots (or you can cook fresh carrots)
1 small can of corn
2 stalks of cooked celery
one large cooked onion
1 small can of green beans (or you can cook them)

Throw all the cooked veggies in with the noodles, and add 1 jar of your favorite tomatoe juice, or your favorite spaghetti sauce; I use Prego onion, garlic, and tomato sauce). Then add 1 package of Morning Star Meal Starters Grillers Recipe Crumbles (found in the frozen waffle/pancake section at Walmart in a green bag). Add water, if you need more broth. Add salt to taste.

This recipe is VERY FAST and tastes delicious! All of my vegetarian and meat-eating friends love it! The vegetarian crumbles (tastes like hamburger) REALLY makes the soup! Left overs taste better as the days go by!
