Oh, the vibrant green color of broccoli. It’s a great source of calcium, has a wonderful texture, and tastes great! Salads are as wonderful as they are nutritious! Potluck Broccoli Salad
2 slices vegetarian breakfast strips*
Head fresh broccoli (about 8 c.), cut into bite-sized pieces
1/4 c. red onion, chopped
1/3 c. raisins (I usually do half raisins, half craisins)
2 T. rice vinegar
2 T. sugar
3/4-1c. mayonnaise (according to taste)
1/4 c. sunflower seeds (raw or salted)
Fry breakfast strips in skillet, then set aside.
In a med. bowl, combine the broccoli, onion, and raisins/craisins. In a small bowl, whisk together vinegar, sugar, and mayo. Pour over broccoli mixture and toss until well mixed. Crumble in prepared breakfast strips. Add sunflower seeds. This is supposed to be refrigerated for about 2 hours before serving, but I like it so much that I start eating it right away! This is a good way to get more raw veggies into your diet.
*Note- You can buy Morning Star Farms breakfast strips in any Wal-mart grocery store in the frozen section. They are a vegetarian substitute for bacon
