Naan Khataai
1 cup ghee (butter)
¾ cup sugar
2 ½ teaspoons baking powder
½ cup bicarbonate of soda (baking soda)
¼ teaspoon elaichi (nutmeg)*
2 tablespoons water
1 tablespoon oil
2 ½ cups flour
Put ghee in bowl; add baking powder, baking soda, sugar and spices. Stir briskly with spoon. Add water and oil and continue to stir briskly. Then add enough flour to make biscuit-like dough.
Divide dough into pong-pong sized balls. Roll between palms of hand, flatten with finger (½ inch thick) leaving indents and place an almond in the middle.
Bake at 350 F to a pale cream color like shortbread. Cool in pan before removing as it is likely to break if removed while still hot.

*Roberta’s note: Cardamom is the English word for elaichi, so that may also be used in place of the nutmeg.
