If you’re a pumpkin lover, you might want to give this a try. My friend Colleen shared this recipe with me and assures me it’s wonderful.

Colleen’s Creamy Pumpkin Soup

1 Tbsp. butter
1 onion, chopped
1 lb. pumpkin, peeled and chopped
2 c. water
2 t. chicken-style seasoning
1/4 c. half and half

Fry onion in butter until soft. Add pumpkin and cook for 10 minutes. Add water and chicken-style seasoning. Simmer until pumpkin is tender. Puree mixture in blender. Reheat without boiling; stir in half and half.
