This delicious casserole is special enough to stand in for your traditional stuffing dish during the holidays.

Cashew-Rice Casserole

1 onion, chopped
1 rib celery, chopped
1 1/4 c. raw cashews, coarsely chopped
1 1/2 c. raw mushrooms, chopped
1 c. COOKED brown rice
1 1/4 c. seasoned dry bread cubes
1 T. Bragg’s Liquid Aminos*
1 T. chicken-style seasoning
1 t. paprika
1 T. dried parsley
1/2 t. salt
1/4 t. thyme
1 c. soy milk (regular could be used)

Preheat oven to 350. Saute onions and celery in small amount of water until soft. Add Bragg’s to milk. combine all ingredients together and place in a 1/2 qt. casserole. Bake about 50 minutes. May serve as is or with gravy over the top.

*Note: Bragg’s Liquid Aminos is an unfermented soy sauce that can be found in most health food stores.
