Here is the biscuit recipe that I reach for when I’m making strawberry shortcake but they’re great by themselves too….not dry like some biscuit recipes. For a healthier vegan option, try margarine, soy milk, Rumford baking powder (no aluminum), and natural sugar crystals.
2 c. all-purpose flour
4 t. baking powder
2 Tbsp. sugar
1 t. salt
1/3 c. butter, cold
1 c. soy milk (may use regular)
Preheat oven to 425 F. Mix first 4 ingredients together in a bowl. Cut in butter with a pastry blender until crumbly. Add milk. Stir until it forms a ball. Add a bit more milk if necessary to make a soft dough. Roll and cut into circles with a biscuit cutter or pat into biscuits with your hands. Arrange on a greased baking sheet. Bake at 425F for about 10- 12 minutes or until risen and nicely browned. Makes 10-12 biscuits.

Note: You may experiment with some different herbs. Try parsley, garlic and basil OR throw in a little shredded sharp cheese.
