My kids love these and the best part is that they are so easy!
Bean and Cheese Nachos
1 bag corn tortilla chips
1 can refried beans (check the back and make sure there is no lard–go for the fat free)
small jar salsa
sliced black olives (opt.)
Mexican shredded 4-cheese blend
scallions (green onions), chopped
Spread a light layer of refried beans on each tortilla chip with a knife and layer in the bottom of a non-stick baking pan (or line with parchment paper). If you spread it too heavy, the chips will get soggy. Dribble a little salsa on each chip. Spread on sliced black olives over entire pan of nachos (opt). Top with shredded cheese and scatter scallions over that. Bake at 350 just long enough to melt the cheese (3-6 minutes). Arrange on a plate and put a large dollop of sour cream in the middle. Enjoy!
