I have not tried this particular soup but I like crockpots and I like easy! This looks pretty versatile when it comes to beans and seasonings. If you try it, let me know how it turned out.
Crockpot Minestrone Soup (Vegan)
3 cans (6 c.) vegetable broth
2 carrots, chopped
2 large onions, chopped
3 celery ribs, chopped
2 garlic cloves, minced
1 small zucchini, cubed
1 handful fresh kale, chopped (or spinach)
1/2 cup barley (dry)
1 (14 1/2 ounce) can chickpeas or white kidney beans, drained*
1 tablespoon fresh parsley, minced
1/2 teaspoon dried thyme
1 teaspoon dried oregano
1 (28 ounce) can crushed Italian tomatoes
1 teaspoon salt
1/4 teaspoon pepper
grated cheese (optional as a garnish)
Combine all ingredients except cheese in slow cooker.
Cover. Cook on Low 6-8 hours or until vegetables are tender.
*Note: Black beans are also delicious, when used with spinach (instead of kale). May experiment with seasonings. Season salt is a good substitute.
