There’s nothing like a hot bowl of soup or stew to warm you up and it’s satisfying too! Here is a recipe from my friend Mimi. She brought it to a church potluck one day and my husband asked her for the recipe. She told us her secret was the peppercorns. It’s delicious!

Mimi’s Lentil Stew (Vegan)

2 c. lentils
28 oz. can diced tomatoes
3-28 oz. cans water or more
1 c. diced onion
1 1/2 c. diced celery
1/2 c. chopped carrots (optional)
Several cloves of garlic, diced
2 Tbsp. garlic powder
2 Tbsp. onion powder
2 t. basil
2 t. Italian seasoning
1 t. pepper corns
Salt to taste

Add all the ingredients to the pot and cook until done. Mimi enjoys it over rice or linguini. I enjoy it as a stew with a crusty piece of bread. Either way, you’re sure to enjoy it!
