This recipe has been with our family for quite a while. I enjoy it because it’s simple, tasty, and economical. Enjoy it with crackers, ciabatta bread, or over buttered toast.
Easy Split Pea Soup (Vegan)
2 cups dry split peas
1 carrot, diced small
1 T. bacun’ bits*
1/2 t. onion powder
salt or garlic salt to taste
soy milk (regular milk may be used)
In soup pot, put split peas, carrot, bacun’ bits, and onion powder. Add enough water to cover 1 inch with water. Bring to a boil, then simmer on medium heat for about 1 hour, stirring frequently and keeping and eye on the water level so as not to burn the peas.
When peas are broken down and have become thick and creamy, add soy milk to desired consistency and flavor with salt.
*Note: Bacun’s are similar to Bacos but are brown in color. You may find them at a health food store or your local Co-op. If you don’t have them, try experimenting with a LITTLE liquid smoke (it’s very concentrated so start out with just 1/8 t. A little goes a long way so don’t overdo it), or leave them out altogether.
