This is something special instead of ordinary corn. It whips up really fast and has been taken to many a potluck.

Scalloped Corn

3 eggs, beaten
1/2 c. soymilk
1/4 c. flour
1/4 c. cornmeal
2 Tbsp. sugar
1/2 t. salt
dash pepper (opt.)
1 c. grated cheddar cheese
4 c. corn (1 can creamed and 1 can kernel or frozen corn)
2 Tbsp. *bacUns (opt.)
French’s Fried onions (opt.)

Combine eggs, milk, flour, cornmeal, sugar, salt and pepper; stir well. Add cheese, corn and bacUn’s, if using. May top with French’s Fried onions if desired. Bake at 350 for about 1 hour or until done (may take longer for the middle to set).

*Note: BacUn’s can be found online and are very much like baco bits, but brown in color. In my opinion, they have more of a smokier flavor and they don’t turn your food red (from the dye) that baco bits do.
