I have a daughter who loves potatoes so we have them quite frequently. When we have leftover mashed potatoes, she often requests that I make potato patties out of them. Some people call them potato pancakes. Whatever you call them, I think you’ll agree they’re delicious, not to mention easy!
Leftover mashed potatoes
1-2 eggs (depending on amount of potatoes)
Italian bread crumbs
Minced fresh onion
Garlic salt to taste
In a bowl, mix mashed potatoes, egg, a little bread crumbs, minced onion, and seasonings. Form into patties and brown on both sides in a little oil. Great as is or served with ketchup.
Note: Don’t worry about exact measurements. It’s difficult to specify as it depends on the amount of leftovers. For a medium size mixing bowl full of potatoes, I usually use about 3-4 Tbsp. of bread crumbs and 1/2 a small onion, minced. It’s easier to form the patties when the potatoes are cold, so refrigerate overnight.
For vegan potato patties: just eliminate the egg and add a little soy milk to moisten the potatoes. They won’t hold together as well, so turn very carefully and make sure they’re very browned before flipping.
