There’s nothing that satisfies like a baked potato! Our family has always loved to set out all kinds of potato fixings and make a baked potato “bar” as our entire meal. If you’re vegan, the Tofutti company makes a good mock sour cream. Some of the fixings we’ve put out on our baked potato bar have included, steamed broccoli, cheese, green onions, sour cream (or Tofutti Sour Supreme tm), chives, steamed cauliflour, and chili. It’s simple, it’s easy, and it’s fairly inexpensive to make them. What’s not to love?

Best Baked Potatoes

Russet potatoes with skin (Red potatoes may also be used)
Vegetable oil
Sea salt OR coarse pretzel salt
Mrs. Dash garlic seasoning

Scrub and dry off potatoes. Prick with a knife and roll in oil. Place on a cookie sheet lined with foil. Shake on seasonings and bake in a 350 degree oven for about 1 1/2 hours. Skins will be delicious. If you prefer a softer skin, wrap in foil before baking. If you don’t have the seasonings listed, improvise and use what you have. In a pinch, you can use garlic powder and onion salt.
