If you haven’t had this salad, you’re in for a treat! I first enjoyed this at a potluck gathering and I couldn’t believe how scrumptious it was! It’s so flavorful that I enjoy eating it in place of dessert.
Strawberry Spinach Salad
1/4 c. sugar
1/3 c. oil
1/4 c. balsamic or apple cider vinegar
1/4 t. paprika
1/4 t. vegetarian Worcestershire sauce
small sliced red onion
approx. 16 oz. fresh baby spinach
1 qt. fresh *strawberries, sliced
1/3 c. candied pecans OR glazed walnuts OR *toasted almonds (sliced or slivered)
1/2 c. feta cheese (opt.)
In a mixing bowl, whisk together sugar, oil, vinegar, paprika, and Worcestershire sauce. Chill for 1 hour. Combine onion, spinach, strawberries, and nuts. Pour dressing over salad and refrigerate 10 minutes. Lightly toss in feta cheese before serving. Don’t refrigerate for too long or it will get soggy. This is so delicious that you shouldn’t have any leftovers!
*Note: Mandarin oranges may replace the strawberries if they aren’t in season, but I highly recommend trying this with strawberries if you can! If you choose to do almonds, they can be lightly toasted in a dry pan or in the oven for 2-3 minutes. Be careful they don’t burn. White vinegar may also be substituted in a pinch if you don’t have the balsamic or apple cider vinegar.
