This is an unusual but delightful salad. I first tasted it at a potluck and I had to find a recipe. There are many different variations but I’ve never tasted one I didn’t like. Give this one a try. It may become a regular.

Ramen Noodle Salad

16 oz. bag of coleslaw mix OR shredded cabbage
1 pkg. Oriental flavor Ramen noodles, raw and crushed (save pkt. for dressing)
1/2 c. slivered almonds, toasted (put on a cookie sheet for a few minutes in a 350 oven–don’t burn them!)
6 green onions (tops too), chopped

Dressing:
1/2 c. oil
1/4 c. vinegar (may use white or cider vinegar)
1/4 c. sugar
Oriental seasoning pkt.

In a bowl, combine the dressing ingredients; then refrigerate to chill.

20 minutes before serving, combine the coleslaw mix, ramen noodles, almonds and green onions. Add the chilled dressing and toss (I use a little over half the dressing, so make it according to taste. You may not need all the dressing). Great for potlucks.
