1 small (6oz.) pkg. orange *gelatin
1-20 oz. can crushed pineapple, drained
1 c. grated carrots
Make gelatin according to package directions. Chill until soft-set, then gently add the pineapple and carrots. Refrigerate until it is firmly set.
*Note: Regular gelatin is made with animal products. There are a couple vegetarian gelatin substitutes on the market now. ”Natural Desserts” puts out vegan gels in several flavors. Since they sell it in 3 oz. packages, just use 2 boxes to account for the 6 oz. regular package in the recipe. Another option would be to use “Lieber’s” unflavored vegan gel and to replace the water with fruit juice, adding a little extra sugar.
