I love German potato salad, but I prefer it cold. Here’s a typical German recipe you can play around with and make it your own, depending on your personal tastes. I’ve added vegetarian breakfast strips instead of your traditional bacon. If you don’t have any on hand, make it anyway. It will still taste great!

German Potato Salad

7-8 medium red potatoes with skins
1/2 c. thinly sliced red onion
2 T. flour
2 T. sugar
2 t. salt
3/4 c. water
1/3 c. vinegar
3 vegetarian breakfast strips OR bacos

Cook clean, scrubbed potatoes in boiling salted water, about 30 minutes or till firm. Drain, cool, and slice thin. Set aside. Fry onions in a couple tablespoons of oil. Blend dry ingredients into the onions and oil and cook over low heat till bubbling. Take off heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for 1 minute. Carefully stir in the sliced potatoes until heated through. Set aside. Fry breakfast strips until crisp and crumble into potato salad. Eat warm or chill.

Note: If the salad seems a little dry, your potatoes may have been a little too large. Not to worry…..just double the dressing recipe and just add to suit your taste.
