Mike received this recipe from a family back in New York who used to bring them to a church potluck. We now can them almost every year. Cook beets and peel. Cube beets or cut into chunks and put in clean, sterilized mason jars. Make syrup below and follow instructions.

Simple Secret Pickled Beets

Syrup:
3 cups vinegar
2 1/4 cups sugar
3 tsp. salt

Heat until hot and pour over cooked beets in clean mason jars, leaving 1/2 inch space at top. Put in canner and boil 10 minutes.
