3 c. quick oats (If you don’t have quick oats, pulse old-fashioned oats in a blender to get the same texture).
2 c. flour (or use 1½ c flour and ½ c. pecan meal)
1 c. *wheat germ
1 Tablespoon salt
¾- 1 c. brown sugar
1 ¼ c. water
¾ cup olive oil
Roll out on 4 cookie sheets as thin as possible. You will probably have to sprinkle with flour and use your roller. Score into crackers before baking.
Bake at 300º for 30 minutes alternating in the oven and watching closely and taking out as they get brown and returning to the oven.
You will need to watch as they can burn real fast because they are so thin.
*Note: Linda states that Martin’s Farm Market sells wheat germ at a reasonable price compared to the supermarket, and is kept in their refrigerator section. If you don’t have a Martin’s Farm Market, try your local food co-op or health food store.
