I love tofu. It is very versatile and takes on the flavors of spices that you add to it. Here is a great recipe containing no eggs or dairy. It is softer than patties with eggs, but it is delicious. I hope you like it.

Tofu-Nut Patties

1 pound tub firm tofu, drained
1 onion, chopped
1/2 c. walnuts, chopped
1/4 c. pecans, chopped
1 1/2 c. saltine crackers, crushed
1 Tbsp. garlic powder
1 3/4 t. sage
1/2 t. salt

Blend tofu in blender until smooth. You may need to add a little water (2-4 T.) to your blender if it won’t blend. Pour blended tofu into a large bowl. Stir in the garlic powder, sage, and salt. When spices are evenly distributed, add onion, nuts, and crackers. Mixture will be stiff. Form into patties about 1/2 inch thick, and brown in lightly oiled pan.

Note: These are somewhat soft, so baking them in the oven with gravy would make them too mushy. They are such a delicious patty though and work best if served with ketchup, alone, or on a sandwich.
