Need a quick meal and have leftover crushed tortilla chips you hate to throw out? Make a meal out of them! Though certainly not gourmet, it is easy, tasty, and kid-friendly.
Quick Chili Casserole
4 c. broken tortilla chips
2 cans chili beans
2 cans chopped tomatoes
1 can sweet corn, drained
1 small can black olives, sliced
1 small can chiles (opt.)
1 jar salsa
1 c. *shredded Mexican 4-cheese OR other cheese
In a 9×13 inch casserole, layer ingredients in order given, adding or omitting foods according to your family’s taste. Bake at 350 covered for 20 minutes, then 10 additional minutes, uncovered.
*Note: For a vegan dish, omit the dairy cheese and drizzle with a vegan cheese sauce.
