The following recipe is a delicious pesto variation from our good friend Kim. Kim and her husband Kimber are “foodies” in the very best sense of the word, and they love using the freshest ingredients. Enjoy this wonderful recipe!
1/2 Cup olive oil
3 cloves garlic
1/4 tsp. salt
2 Tbsp. pine nuts (pignoli) or walnuts
2 cups firmly packed fresh basil leaves
2/3 cup Parmesan cheese
Whiz oil, garlic, salt, and pine nuts in food processor. Add basil and blend well. Gently blend in cheese.
Kim says: “Spoon over pasta (spaghetti is my favorite) and toss well.
Serve immediately with green salad and bread. Delicious. This also freezes well. Just make it and freeze for a winter treat. Makes good pizza sauce for a margarita pizza. For pizza sauce, freeze without the parmesan cheese.”
