Sugar-free Apple Pie
1-12 oz. can frozen apple juice concentrate (do NOT dilute)
6 large Granny Smith apples, sliced
1 Tbsp. cinnamon
1/4 t. nutmeg
2 Tbsp. cornstarch
Unbaked pie crusts for two-crust pie
Preheat oven to 350. In a saucepan, add most of the apple juice concentrate (reserve some to dissolve the cornstarch in), spices, and sliced apples. Cook apples just until they can be pierced easily with a fork. Dissolve the cornstarch in your reserved apple juice concentrate, add to the apples, and thicken. Place in an unbaked pie crust and cover with the top crust. Bake approx. 45 minutes or until crust is browned.
