Here is a recipe our family loves. It was given to me by my good friend Karen, years ago. It is very rich and delicious, so you’ll only want to serve this during special times. If you’re looking to “wow” a guest when they stop in for dessert and herb tea, this recipe delivers!

Pumpkin Streusel Bars

1 3/4 c. all-purpose flour
1/3 c. packed brown sugar
1/3 c. granulated sugar
1 c. butter, cut into small pieces
1-16oz. can pumpkin
1 c. walnuts, chopped
1 can sweetened condensed milk
2 eggs
1 t. ground cinnamon
1/2 t. ground allspice
1/2 t. salt

Preheat oven to 350. In a medium bowl, combine flour and sugars. Cut in butter until crumbly. Stir in nuts. Reserve 1 c. of the crumb mixture. Press the remainder firmly in the bottom and about halfway up the sides of a 10 x 13 inch baking dish. (If you use a smaller dish, bars will be thicker).

In a large mixing bowl, combine remaining ingredients. Mix well and pour into prepared dish. Top with reserved crumb mixture and bake for 55 minutes or until golden on top. Cool, then cut into bars. Refrigerate leftover bars.
