Don’t think of this pudding as the traditional pudding that refined tastebuds are used to. It’s hard to describe, but is more of a cross between a pudding and a hot cereal. I have been making this for my children since they were very young. They named it “Mama’s Rice Pudding” and often request it. It was given to me by my friend Kathy. This is a great recipe to make when you have leftover rice to use up. I do hope you try it as it’s very tasty.

Mama’s Rice Pudding

1/3 cup raw cashews
1/2 cup hot cooked rice
1/3 cup maple syrup
1/4 tsp. salt
1 tsp. vanilla
4 Tbsp. cornstarch
2 1/2 cups water
Blueberries to top (opt.)

Blend all the ingredients with 1 1/2 cups of water until very smooth, about 1 minute. Add the remaining cup of water and blend. In a saucepan, boil the blend ingredients stirring constantly. Serve hot or cold with fresh blueberries over the top if desired.
