I received this recipe many years ago and recently just came upon it again by accident. It was from one of the best cooks in our church! Though I haven’t tried this particular pie (yet), knowing Elsie, I can’t imagine it being anything but wonderful.

Elsie’s Fresh Strawberry Pie

1 baked (9-inch) pie shell
1 1/2 qt. fresh strawberries
1/2 c. water
1 c. sugar
2 1/2 Tbsp. cornstarch
1 Tbsp. butter

Wash and hull berries; drain well. Put 1 qt. of berries in refrigerator to chill. Crush the remaining 1/2 qt. berries. Blend sugar and cornstarch; add water, a small amount at first, and mix with berries. Carefully stir and heat to boiling in a heavy saucepan; boil 2 minutes. Add butter and stir in well. Put the glaze into a bowl and refrigerate. Fill the pie shell with the berries. Serve with whipped cream.
