Try this moist, sure-to-please apple cake and watch it disappear!

Apple Cake

1/2 cup vegetable oil
1/4 c. applesauce
2 eggs
1 1/2 cups white sugar
2 1/2 cups all-purpose flour
3 cups chopped Granny Smith apples
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground nutmeg
2 tsp. baking soda

Preheat oven to 350 degrees F. Grease and flour a 9×13 inch pan.

Chop apples finely and place into a large bowl. In a separate bowl, beat eggs, oil, and applesauce together and pour over apples. Set aside.

In a medium bowl, mix sugar, flour, salt, cinnamon, nutmeg and baking soda. Fold into wet apple mixture. Batter will be thick.

Pour into prepared 9×13 inch pan, and bake at 350 degrees for 45 minutes. Once cool, dust with powdered sugar or frost with Cream Cheese Frosting.

Note: May add 1/2 c. chopped nuts and/or 1/2 c. raisins
