We have a family favorite here! It’s easy to throw together and has a flavorful “meaty” texture because of the vegetarian burger that is added. We like it garnished with shredded cheese and sour cream, and yellow corn tortilla chips on the side for dipping. Some like it hotter than others, so adjust your chili powder and cayenne pepper to suit your family.
“Meaty” Crockpot Chili (Vegan)
1/2 bag *Morning Star Farms Recipe Burger Crumbles
1 large onion, chopped
4 garlic cloves, minced
1-28 oz. can crushed tomatoes
2 cans red kidney beans, drained
1 can black beans, drained
1 can chili beans (do not drain)
4 bay leaves
3 Tbsp. dried green pepper flakes
2 Tbsp. chili powder (less if you like it milder)
1 1/2 Tbsp. oregano
2 t. cumin
1 t. salt
1 t. sugar
1/2 t. cayenne pepper
2 Tbsp. olive oil
1 Tbsp. apple cider vinegar
Brown burger crumbles, onion, and minced garlic in olive oil until onion is soft and burger is browned. I season it with a couple shakes of garlic salt and Mrs. Dash garlic, which is optional. Add burger mixture to the crockpot, along with the crushed tomatoes, beans and the rest of the ingredients. Stir and cook on high for 4 hours. Serve with tortilla chips or cornbread.
*Note: Morning Star Farms Burger Recipe Crumbles are my favorite vegetarian burger. It is so versatile and does not have an aftertaste like some canned burgers. It can be found in the frozen section of your grocery store.
