Bran muffins are a favorite of mine and they’re so good for you! Enjoy this recipe with some fresh fruit and you’ve got yourself a yummy breakfast.
Oat Bran Muffins
1/2 c. brown sugar
1 1/2 c. oat bran OR other bran (this is not the same as regular oats)
1 1/2 c. all-purpose flour
2 t. baking powder
2 t. baking soda
1/2 t. salt
1 t. cinnamon OR nutmeg–opt.
1 c. cold applesauce (may also use cinnamon applesauce for a great flavor)
1/4 c. oil
1/2 c. raisins–opt. (plump them up in hot water and add 2 T. of raisin water)
Preheat oven to 400. Line or grease muffin cups. Blend together brown sugar, oat bran, flour, baking powder, soda, salt, and cinnamon if using. Add eggs, applesauce, and oil. Mix until well blended. Spoon batter into muffin cups. Let stand 10 minutes. Yields 12 muffins.
