It was a Christmas tradition for me to make the Cranberry-Orange bread…my mother insisted upon it. Then we moved away and for some reason I stopped making it until my son had his first taste. Now HE insists I make it every Christmas. But you don’t have to make it just for the holidays. It’s delicious year-round!

Cranberry-Orange Bread

2 c. all-purpose flour
3/4 c. sugar OR 1/2 c. honey
1 1/2 t. baking powder
1/2 t. baking soda
3/4 t. salt
1 c. *cranberries, coarsely chopped
1/2 c. walnuts OR pecans
2 t. grated orange rind
1 egg, beaten
3/4 c. orange juice
2 Tbsp. oil

Sift flour, sugar, baking powder, baking soda, and salt. Stir in coarsely chopped cranberries, walnuts, and grated orange rind. In separate bowl, combine 1 beaten egg, orange juice, and oil. Add to dry ingredients, stirring just until moistened. Bake in a greased loaf pan at 350 for 50 minutes or until done. Cool for about 10 minutes in pan, then remove. Freezes well.

*Note: Since cranberries are usually sold only around the holidays, I usually stock up and put them in my freezer so I can use them year-round.
