Tired of plain ol’ sandwich buns? Try adding some carrots and cheese for more pizazz! Linda Sturm says that these are delicious with oat burgers, eaten as is, or can be placed under the broiler and toasted.

Cheese and Carrot Sandwich Buns

1 c. water
1c. Milk
2 T. or 2 packets yeast
2 T. sugar
1 ½ t. salt

1 c. finely shredded carrots (put in processor and make very fine)
¼ c. oil
1 pkg. (2 cups) cheddar cheese
1 egg
5 ½ -6 ½ c. flour (using BREAD flour has made such an amazing difference when I use yeast. It is available in 5# bags at the store and this is where I got the recipe. I just buy the 25 # bag now at Sams).

Let knead for about 10 minutes in Bosch or Kitchen Aid with dough hook. Let rise until doubled. Roll out to ½” thickness and use a mug or glass to cut buns. Place on cookie sheet to rise until doubled. Can brush with egg wash and sesame sesame seeds just before putting in oved.

Bake 375º for 15-20 minutes rotating half way through so tops and bottoms are evenly browned.

Makes 25-30 sandwich buns.
