My friend Christine shared this recipe with me and said they were so good that they could also fit into the dessert category!

Banana Peanut Butter Chocolate Chip Muffins

4 Tablespoons softened butter
2 eggs
2 ripe bananas
1 cup plain low-fat vanilla yogurt
2/3 cup sugar
1/3 cup creamy peanut butter

1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder

1/2 cup semi-sweet chocolate chips

1/4 cup course sugar
1/2 cup shredded sweetened coconut

Preheat oven to 350 F.
Place butter, sugar, eggs, bananas, yogurt and peanut butter into large mixing bowl. Mix ingredients to combine. Place all the dry ingredients into a separate large bowl and stir to combine. Gradually add to wet ingredients along with chocolate chips just until combined. Scoop into muffin tins lined with paper cups 2/3 full. Sprinkle tops with course sugar and shredded coconut. bake for 20-25 minutes or until toothpick comes out clean from center of muffin.

Makes approximately 12 muffins
