Perhaps this recipe appears to be too simplistic but I’ve found that I enjoy this more than guacamoles with all that sour cream and mayonnaise. It has a fresh, clean taste to it, without all that dairy. I like to enjoy a large plate of tortilla chips surrounding the prepared guacamole, salsa, and a few scallions (green onions) scattered on top.
onion salt to taste
dash garlic powder
lemon juice to taste
Roma tomato, seeded OR 1/2 red pepper, cut fine (opt.)
Cut avocado in half, remove the pit and scoop out with a spoon. Mash with a fork. Add onion salt (to taste), a dash of garlic powder and lemon juice to taste; stir in. Add about 1/2 Roma tomato for every 2-3 avocados, if desired.
Note: Lacto-ovo vegetarians may also sprinkle some Mexican shredded cheese on top and add a dollop of sour cream. Also, try some tortilla chips with lime for an added kick.
